Keto bread number 2

Well that was successful! I tried the keto bread recipe again the other day with some new ingredients. The big change, I believe was this - Honeyville Oat Fiber:

This second loaf obviously has the more natural bread color to it, but it also feels better too - more "springy-bread"-like, and the taste is more akin to a nice light wheat. I also used a different yeast, this Saf Instant Yeast instead of the active dry I typically use.

We have a winner! It's perfect with cream cheese and tomatoes or peanut butter. I'd love to try to make sunshine through a hole in the fence for breakfast at some point with it! My next goal is to see if I can take this and tweak it to make keto cinnamon rolls!
