One of our favorite dishes lately has been this fantastic hasselback chicken from Ruled.me. I've made it a bunch of times, but only have done it with a package of chicken breasts. And then last week, our family and friends were finally all able to get together to celebrate Passover and I decided to try my hand at this in bulk! It worked better than expected! I split each chicken breast into two halves before prepping the rest of the way and that really worked well to help portion out the pieces for the dinner but also at the end when people wanted to take home leftovers!
