It's been a while since I've posted on here! Summer vacation, my current development project is a Drupal 7 site so I haven't had the time to return to my Drupal 8 development (which actually is going quite well, and I'll update in another post) and other such things have been taking a lot of my time. Today, however, I'm going to post something that will (hopefully) be the start of a new experiment in keto bread making! Dana found this post on Reddit a few months back and I finally got around to making this keto bread recipe. I didn't have the oat fiber, apparently one of the important ingredients, so I substituted ground psyllium husk. Even with this substitution, the bread turned out AMAZING. It was the perfect texture and really tasted like a good-ol' risen yeasty wheat bread. And at 22 net carbs per LOAF, you can't get any better than that. Tomorrow, if I have time, I'll see if I can do it again with real oat fiber that we ordered on Amazon. I'll report back!
